Raise your hand if you have tons of time every day to make a delicious balanced dinner with plenty of time to spare… anyone?  Beuller?  Yeah, me neither!  I use the slow cooker anytime I can, and I rotate a lot of the same easy meals over and over again.  Honestly, ANY time I can simplify a meal (I mean, in a way that does not involve serving cheese and crackers and calling it good enough) I’m all for it.  So let me show you what we’ve moved into our meal rotation: Garlic & Herb Pork Sirloin with red potatoes and carrots.  In under 15 minutes of prep.  Yep.

Smithfield offers expertly seasoned and marinated pork loins and roasts, so there’s no measuring, no mess, no stress – just a couple of ingredients and a few hours letting dinner make itself (hello, easy)!  It’s 100% fresh pork, so by adding your starch and veggies to the pot, you’ve got a balanced meal for your family that’s delicious with a bare minimum of extra work.

Here’s what you will need for a quick, one-pot meal:

  • 1 Smithfield Garlic and Herb Pork Sirloin (they are around 2-3 lb. and serve 4-6 people)
  • 1/2 c. chopped onion
  • 4-6 washed and quartered red potatoes
  • 1 lb. baby cut carrots
  • salt and pepper to taste
  • 2 Tbsp. water

Set your pork roast in your slow cooker, and surround it with potatoes and carrots.  Add 2 Tbsp. water to the pot to ensure that the potatoes and carrots don’t stick.  Sprinkle on diced onion, and add a little salt and pepper to the potatoes and carrots if you like.  The seasoning from the pork roast was enough for us, but every family’s tastes will be a little different.

Cook in your slow cooker for 4-5 hours on low, or 3 hours on high.  This is a perfect meal to toss in at lunchtime, and have ready for dinner.

There are 7 different flavors of Smithfield marinated pork roasts, so you can definitely get creative on your menu, or mix up the same recipe in more than one way!  Just slice it up for your family for a busy weeknight (or any night).  I mean, I confess – even if I’m NOT on a time crunch, I still want dinner to be as easy as possible, especially when it’s made from real, fresh ingredients.
